- 2 medium zucchini
- 1 tbsp olive oil
- 1 small onion
- 2 garlic cloves
- 1 pound lean ground beef
- 2 tsp Italian seasoning
- 28-ounce can diced tomatoes
- 2 cups shredded mozzarella cheese
- Preheat your oven to 350°F (175°C).
- Slice zucchini into rounds, salt them, and let sit in a colander for 15 minutes to drain excess moisture. Rinse and pat dry.
- Heat olive oil in a skillet over medium-high heat. Sauté onions until soft, then add garlic and ground beef. Cook until beef is browned.
- Stir in drained diced tomatoes, Italian seasoning, salt, and pepper; remove from heat.
- In an 8×8 baking dish, layer half of the beef mixture, followed by half of the zucchini and half of the cheese. Repeat layers.
- Bake for 20-25 minutes until cheese is melted and bubbly.
