  • 2 tablespoons avocado oil, divided
  • 1.5 lbs boneless, skinless chicken breasts, diced
  • 1 small red onion, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 small head broccoli, cut into small florets
  • 1 (20 oz) can pineapple chunks
  • ¼ cup pineapple juice, reserved from the can
  • ¼ cup rice apple vinegar
  • ⅓ cup soy sauce (or tamari for gluten-free)
  • 1 ½ teaspoons sesame oil
  • 2 tablespoons arrowroot powder (or cornstarch)
  • Sesame seeds, for garnish
  • Cooked rice or quinoa, for serving

Instructions

  1. Heat 1 tablespoon of avocado oil in a large pan or wok over medium-high heat and add diced chicken. Cook until browned and cooked through, then remove from the pan.
  2. In the same pan, add remaining avocado oil and stir-fry red onion, red bell pepper, yellow bell pepper, and broccoli until tender-crisp.
  3. In a separate bowl, whisk together reserved pineapple juice, rice apple vinegar, soy sauce (or tamari), sesame oil, and arrowroot powder until smooth.
  4. Return chicken and pineapple to the pan with vegetables and pour the sauce over everything. Stir well to combine and cook until thickened.
  5. Serve hot over rice or quinoa, garnished with sesame seeds.
