  • 2 cups cooked white or brown rice (or cauliflower rice)
  • 1 pound lean ground turkey
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper (to taste)
  • 2 cups chopped romaine or iceberg lettuce
  • 1 cup corn (fresh, grilled, or frozen and thawed)
  • 1 avocado (sliced or guacamole)
  • 1/2 cup salsa
  • Fresh cilantro (chopped)
  • Lime wedges
  • 1 cup black beans (rinsed and drained)
  • 1/3 cup light Greek yogurt

Instructions

  1. Cook the rice according to package instructions, using chicken broth for added flavor.
  2. In a skillet over medium heat, warm olive oil and add ground turkey. Cook until browned, about 5–6 minutes.
  3. Stir in spices—chili powder, cumin, smoked paprika, garlic powder, onion powder—and season with salt and pepper. Add a few tablespoons of water and allow to simmer on low heat for 8–10 minutes.
  4. In a saucepan, warm corn and black beans together.
  5. Assemble your bowl by layering rice first, followed by lettuce, seasoned turkey, corn mixture, avocado slices or guacamole, salsa, Greek yogurt, and fresh cilantro.
