  • 1 large sweet potato
  • 2 cups broccoli florets
  • 2 tsp olive oil (1 tsp for chicken, 1 tsp for sweet potatoes)
  • Salt & black pepper to taste
  • 1 tsp paprika
  • 1 tsp garlic powder

Instructions

  1. Preheat your oven to 200°C (400°F). Rub chicken breasts with 1 tsp olive oil, salt, pepper, paprika, and garlic powder. Place on a baking sheet and bake for 20-25 minutes until fully cooked.
  2. For the sweet potatoes, slice into rounds and toss with 1 tsp olive oil, salt, and optional spices. Arrange on a baking sheet in a single layer and roast for about 25 minutes until tender.
  3. Steam the broccoli florets in a steamer basket over boiling water for about 5-6 minutes until tender-crisp.
  4. Once cooked, slice the chicken and divide all components evenly into airtight containers.
