  • 1/3 cup honey
  • 1/4 cup butter
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Bake un-pierced sweet potatoes on a baking sheet for 40-45 minutes until soft. Let cool.
  3. Peel and slice apples; drizzle with lemon juice to prevent browning.
  4. Remove peels from cooled sweet potatoes and cut into 1/2-inch slices.
  5. Layer apple and sweet potato slices alternately in an 8×8 or 9×9 baking dish.
  6. In a small saucepan, melt honey, butter, cinnamon, and vanilla over low heat until combined.
  7. Pour the honey mixture over the layered vegetables; sprinkle with optional chopped pecans.
  8. Bake at 350°F (175°C) for 15-20 minutes until heated through.
