  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 4 ounces Brie cheese (rind removed)
  • ½ cup fresh cranberries
  • ¼ cup honey
  • ¼ cup orange juice
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup chopped fresh parsley
  • ½ cup panko breadcrumbs
  • 1 tablespoon melted butter

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium saucepan, heat olive oil over medium heat. Add cranberries and cook until soft. Stir in honey, orange juice, spices, and cook until slightly thickened. Let cool.
  3. Cut pockets into each chicken breast and stuff with Brie cheese and cooled cranberry mixture. Secure openings with toothpicks.
  4. Sear the stuffed chicken in a cast iron skillet for about 2-3 minutes on each side until golden brown.
  5. Combine panko breadcrumbs with melted butter and spread over each chicken breast. Transfer the skillet to the oven.
  6. Bake for 20-25 minutes or until the internal temperature reaches 165°F (74°C). Let rest for 5 minutes before serving.
