  • 2 1/4 cups mashed overripe bananas
  • 2 cups all-purpose flour
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 1/2 tsp nutmeg
  • 1/2 cup butter
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 2 eggs, beaten
  • 1 tsp vanilla extract
  • 1 tsp cinnamon

Instructions

  1. Mash bananas until you have 2 1/4 cups.
  2. In a bowl, mix together flour, salt, baking soda, and nutmeg.
  3. In another bowl, cream butter with white and brown sugars until fluffy. Stir in beaten eggs, vanilla extract, and mashed bananas until combined.
  4. Add banana mixture to dry ingredients and gently mix until just combined.
  5. Pour batter into a greased 7-inch round cake pan and cover tightly with foil.
  6. Place the trivet in the Instant Pot with one cup of water and set the covered cake pan on top.
  7. Seal the Instant Pot lid and cook on manual for 50 minutes. Perform a quick release when done.
  8. Carefully remove the pan using the foil handles and cool on a rack before slicing.
