  • 4 strips thick-cut turkey bacon
  • 3 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon sugar
  • Pinch of salt
  • Pinch of black pepper
  • Smoked paprika (optional for garnish)
  • Fresh chives, chopped (optional for garnish)

Instructions

  1. Boil the eggs in a saucepan, covering them with cold water and bringing to a boil. Remove from heat and let sit covered for 10-12 minutes.
  2. Transfer the boiled eggs to an ice bath for 5 minutes before peeling.
  3. Slice each egg in half and scoop out the yolks into a mixing bowl.
  4. Mash the yolks and mix in mayonnaise, Dijon mustard, apple cider vinegar, sugar, salt, and pepper until creamy.
  5. Stir in most of the crumbled turkey bacon (reserve some for garnish).
  6. Fill egg whites with the yolk mixture using a spoon or piping bag.
  7. Garnish with reserved turkey bacon, smoked paprika, and chopped chives if desired. Chill before serving.
