  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Extra flour for dusting

Instructions

  1. In a large mixing bowl, combine warm water, sugar, and yeast; let it sit for 5 minutes until frothy.
  2. Add flour, salt, dried herbs, mozzarella, and Parmesan to the mixture; stir until a sticky dough forms.
  3. Knead dough on a floured surface for 8-10 minutes until smooth and elastic; add more flour if needed.
  4. Place dough in a greased bowl; cover with a towel and let rise in a warm place for 1-2 hours until doubled.
  5. Punch down the dough and shape it into a loaf or transfer to a greased pan; let it rise again for 30 minutes.
  6. Preheat oven to 450°F (230°C) with a shallow pan of water inside to create steam.
  7. Bake for 25-30 minutes until golden brown; check that it sounds hollow when tapped and has an internal temperature of 200-210°F.
  8. Cool on a wire rack before slicing.
