Ingredients

  • 1.5 lb oxtail
  • 3 garlic cloves (minced)
  • 1 tsp allspice
  • 2 tsp chicken bouillon
  • 4 tbsp cooking oil
  • 1 medium onion (diced)
  • ½ red bell pepper (diced)
  • ½ green bell pepper (diced)
  • 2 tomatoes (diced)
  • 16 oz butter beans (rinsed)
  • 1 cup baby carrots (or chopped whole carrots)
  • 2 tbsp tomato paste
  • 3 cups water
  • 1 tbsp brown sugar
  • 1 tsp cayenne pepper
  • 4 sprigs thyme (or 1 tsp dried)
  • 2-3 bay leaves
  • 1 tbsp cornstarch
  • Pinch of salt

Instructions

  1. Rinse oxtail with water, lemon juice, and vinegar; trim excess fat.
  2. Marinate oxtail with garlic, allspice, bouillon, and spices for at least 30 minutes.
  3. Sear marinated oxtail in the instant pot on sauté mode until browned.
  4. Sauté diced vegetables until soft; deglaze pot.
  5. Return oxtail to pot with reserved marinade and water; pressure cook for 20 minutes.
  6. Add beans and carrots; mix cornstarch with water and stir into pot. Simmer until thickened.
  7. Serve hot with rice and peas.
