- 1.5 lb oxtail
- 3 garlic cloves (minced)
- 1 tsp allspice
- 2 tsp chicken bouillon
- 4 tbsp cooking oil
- 1 medium onion (diced)
- ½ red bell pepper (diced)
- ½ green bell pepper (diced)
- 2 tomatoes (diced)
- 16 oz butter beans (rinsed)
- 1 cup baby carrots (or chopped whole carrots)
- 2 tbsp tomato paste
- 3 cups water
- 1 tbsp brown sugar
- 1 tsp cayenne pepper
- 4 sprigs thyme (or 1 tsp dried)
- 2-3 bay leaves
- 1 tbsp cornstarch
- Pinch of salt
- Rinse oxtail with water, lemon juice, and vinegar; trim excess fat.
- Marinate oxtail with garlic, allspice, bouillon, and spices for at least 30 minutes.
- Sear marinated oxtail in the instant pot on sauté mode until browned.
- Sauté diced vegetables until soft; deglaze pot.
- Return oxtail to pot with reserved marinade and water; pressure cook for 20 minutes.
- Add beans and carrots; mix cornstarch with water and stir into pot. Simmer until thickened.
- Serve hot with rice and peas.
