  • 6 cups vegetable broth
  • 2 cups onions, diced
  • 1 cup celery, diced
  • 1 cup carrots, peeled and diced
  • 1 tbsp garlic, minced
  • ½ tsp fresh ginger, minced
  • 1 tsp sesame oil
  • 1 cup button mushrooms, thinly sliced
  • ½ cup scallions, sliced

Instructions

  1. In a large pot over medium heat, add a little oil and cook the diced onions for about 10 minutes until soft and slightly caramelized.
  2. Stir in the carrots, celery, garlic, and ginger. Pour in the vegetable broth and sesame oil; season with salt and pepper.
  3. Bring to a boil, then reduce heat to simmer uncovered for 30 minutes.
  4. Strain the mixture using a fine-mesh strainer to remove solids and leave a clear broth.
  5. Place mushrooms and scallions into serving bowls; pour hot broth over them.
  6. Add soy sauce or sriracha if desired.
