Ingredients

  • 2 lb thin-sliced beef (or substitute chicken, tofu, or shrimp)
  • 1 lb Korean sweet potato glass noodles
  • 3 medium carrots, julienned
  • 1 large white onion, thinly sliced
  • 1/2 bunch green onions, chopped
  • 6 garlic cloves, minced
  • 1/2 lb spinach leaves
  • 4 tbsp sesame oil
  • 1 tbsp olive oil
  • 6 tbsp soy sauce (or tamari for gluten-free)
  • 3 tbsp brown sugar

Instructions

  1. 1. Cook the Noodles: Bring water to a boil in a large pot with a drizzle of olive oil. Add sweet potato noodles and cook for 5-6 minutes until tender but chewy. Drain and set aside.
  2. 2. Sauté the Beef: In a skillet over high heat, cook the beef until browned. Season with half the soy sauce, sesame oil, and brown sugar while cooking. Once done, set aside.
  3. 3. Prepare the Vegetables: In another skillet, heat olive oil. Add carrots and onion; cook until softened. Stir in remaining soy sauce, sesame oil, brown sugar, garlic, and green onions; cook for another minute.
  4. 4. Combine Everything: Add spinach to the vegetables; stir until wilted. Mix all veggies and cooked beef into the noodles.
  5. 5. Serve: Toss well in a large bowl and serve warm with extra green onions if desired.
