  • 7 oz plain Greek yogurt
  • 2 TBSP fresh lime juice
  • 1 + 1/4 cups all-purpose flour
  • 5 graham cracker sheets
  • 2 TBSP sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3 TBSP coconut oil (melted + cooled slightly)
  • 2 eggs
  • zest of 1 lime
  • 1/2 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1/8 tsp pure vanilla extract
  • lime zest (to taste)

Instructions

  1. In a bowl, whisk together almond milk, Greek yogurt, and lime juice; let sit for thickening.
  2. Crush graham crackers into fine crumbs; set aside.
  3. Mix flour, crushed graham cracker crumbs, sugar, baking powder, baking soda, and salt in another bowl.
  4. Preheat griddle or skillet over medium heat; grease lightly.
  5. Combine wet ingredients with dry ingredients gradually to form thick batter.
  6. Pour 1/3 cup batter onto the griddle; cook until bubbles form and flip to brown both sides.
