  • 1 bunch (10 oz) spinach
  • 1 clove garlic (minced)
  • 1 stalk green onion (chopped)
  • 2 teaspoons soy sauce
  • 1/8 teaspoon salt
  • 2 teaspoons toasted sesame oil
  • 2 teaspoons toasted sesame seeds

Instructions

  1. Trim the ends of the spinach and cut into 2-inch pieces.
  2. Boil water with salt in a pot, then blanch the spinach for about 30 seconds until wilted.
  3. Transfer to an ice bath immediately to stop cooking and preserve color.
  4. After cooling, gently squeeze out excess water.
  5. Mix the cooled spinach with minced garlic, chopped green onion, soy sauce, salt, sesame oil, and sesame seeds in a bowl until well combined.
