  • 2 chicken breasts (cubed or sliced thin)
  • 1 lb potato gnocchi
  • 2 cups baby spinach
  • 1 cup cherry tomatoes, halved
  • 3 garlic cloves, minced
  • Zest and juice of 1 lemon
  • 1 cup chicken broth
  • ½ cup heavy cream (or coconut cream for dairy-free)
  • 1 tbsp olive oil
  • Salt and black pepper to taste

Instructions

  1. Prep all ingredients: cube chicken, halve tomatoes, and measure out liquids.
  2. In a large skillet, heat olive oil over medium heat. Season chicken with salt and pepper, cooking until golden brown (5–7 minutes). Remove from skillet.
  3. Sauté minced garlic in the same skillet for about 30 seconds. Add cherry tomatoes and cook until softened (about 2 minutes).
  4. Pour in chicken broth and bring to a simmer; then reduce heat and stir in cream along with lemon zest and juice.
  5. Add gnocchi to the sauce and cook until tender (3–4 minutes). Stir in baby spinach until wilted.
  6. Return cooked chicken to the skillet, combine well, season further if needed, and garnish with fresh herbs before serving.
