  • 1/3 cup fresh lemon juice
  • 1 tablespoon lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, mix together flour, sugar, baking powder, melted butter, and salt until crumbly. Reserve 1/2 cup for topping.
  2. Press the remaining mixture into an 8×8-inch baking pan lined with parchment paper and bake for 12-15 minutes until lightly golden.
  3. In another bowl, whisk together eggs, sugar, flour, lemon juice, and zest until smooth.
  4. Pour the lemon mixture over the baked crust and sprinkle with reserved crumbs.
  5. Bake again for 20-25 minutes or until set with a slightly jiggly center.
  6. Cool completely at room temperature before chilling in the refrigerator for at least an hour. Dust with powdered sugar before serving.
