  • 2 tablespoons extra virgin olive oil
  • 150 grams fresh mozzarella
  • 1 tablespoon fresh parsley, chopped
  • 2 tablespoons lemon juice
  • 1 small garlic clove, grated
  • 1 teaspoon lemon zest
  • ¼ teaspoon fine salt
  • ¼ teaspoon black pepper
  • Grated parmesan cheese for topping
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat your oven according to the pizza stone's instructions or place a baking sheet inside while it heats.
  2. Prepare the dough by following a no-knead pizza recipe until shaped.
  3. Roll out the dough on parchment paper to about 9×13 inches and transfer it onto a pizza peel or rimmed baking sheet.
  4. In a glass jar, combine parsley, garlic, lemon zest, lemon juice, salt, and pepper; shake until emulsified to create your brine.
  5. Make dimples in the stretched dough; drizzle the brine over it evenly and top with pieces of mozzarella.
  6. Bake on the preheated surface for 8-10 minutes until golden brown.
  7. Finish with additional lemon juice, parmesan cheese, parsley, and black pepper before slicing and serving.
