  • 1 cup corn kernels

  • 1/2 cup diced tomatoes
  • 1/4 cup sliced green onions
  • 1/2 cup sliced jalapeños (optional)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Toss diced potatoes with olive oil and seasonings; spread on baking sheet.
  3. Roast for 25-30 minutes until crispy.
  4. Brown ground beef in a skillet; add taco seasoning and water; simmer.
  5. Heat black beans and corn separately.
