  • 1 1/2 cups granulated white sugar
  • 3 eggs, at room temperature
  • 1 tbsp vanilla bean paste
  • 1 cup buttermilk
  • 1/2 cup whole milk
  • 2 tbsp Earl Grey tea (for soak)
  • 1/2 tbsp culinary lavender (for soak)
  • 1/2 cup sweetened condensed milk
  • 1/2 tsp vanilla bean paste (for soak)
  • 1 tbsp culinary lavender (for frosting)
  • 1 cup unsalted butter, softened (for frosting)
  • 8 oz cream cheese, cold (for frosting)
  • 2 cups powdered sugar (for frosting)
  • 1 tsp vanilla bean paste (for frosting)
  • purple food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a saucepan, heat whole milk and steep Earl Grey tea and culinary lavender for about 10 minutes; strain.
  3. Mix flour, baking powder, baking soda, and salt in one bowl. In another bowl, cream butter and sugar until fluffy; add eggs one at a time.
  4. Alternate adding the dry ingredients and prepared tea infusion to the wet mixture until combined.
  5. Divide batter between pans and bake for 30-40 minutes. Cool before soaking with the Earl Grey lavender milk mixture.
  6. Prepare frosting by beating softened butter and cold cream cheese; gradually add powdered sugar and lavender.
  7. Assemble by layering and frosting the cake.
