Ingredients

  • 350 ml coconut milk
  • 1 ½ tbsp maple syrup
  • ½ tsp vanilla extract
  • 65 g chia seeds (about 6 tbsp)
  • ½ pink dragon fruit (blended)
  • 1 large Alphonso mango
  • Vanilla coconut yogurt (for serving)

Instructions

  1. In a measuring jug, mix together coconut milk, maple syrup, and vanilla extract.
  2. Add chia seeds and stir well with a fork. Let it set for at least four hours or overnight.
  3. Peel and blend the dragon fruit until smooth; mix into the chia pudding.
  4. Dice the mango and blend until smooth for the coulis.
  5. Layer the dragon fruit pudding in serving cups, top with mango coulis and a dollop of vanilla coconut yogurt.
