  • Olive oil
  • Yellow onion
  • Garlic
  • Italian seasoning
  • Tomato paste
  • Chicken broth (32 oz)
  • Crushed tomatoes (28 oz)
  • Rotini pasta (8 oz)
  • Baby spinach (2 cups)
  • Heavy cream (1/2 cup)

Instructions

  1. Prepare meatballs as per your preferred method.
  2. In a large pot, heat olive oil over medium heat; sauté diced onion until caramelized (6-8 minutes).
  3. Add minced garlic, Italian seasoning, tomato paste, salt, and pepper; cook for 1 minute.
  4. Deglaze pot with chicken broth.
  5. Stir in remaining chicken broth, crushed tomatoes, uncooked pasta, cooked meatballs, and seasonings.
  6. Simmer over medium-high heat; reduce to low and cover for 12-15 minutes until pasta is al dente.
