  • 1 ½ pounds sirloin steak (cubed)
  • 1 tablespoon chili powder
  • 1 tablespoon ancho chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon brown sugar
  • 1 teaspoon onion powder
  • ½ teaspoon dried oregano
  • ½ teaspoon ground coriander
  • ½ teaspoon smoked paprika
  • ½ teaspoon cayenne pepper (optional)
  • 2 tablespoons vegetable oil
  • Salt and ground black pepper (to taste)
  • 8 corn tortillas
  • 1 tub sour cream
  • 1 pack cotija cheese
  • 1 jar guacamole
  • 1 jar salsa
  • 1 jar pickled red onions
  • Chopped cilantro (for garnish)

Instructions

  1. 1. Cube the sirloin steak and pat dry.
  2. 2. In a mixing bowl, combine chili powder, ancho chili powder, garlic powder, cumin, onion powder, brown sugar, oregano, coriander, smoked paprika, cayenne pepper (if desired), salt, and pepper.
  3. 3. Toss the cubed steak with vegetable oil and the spice mixture until well coated. Let it marinate for 5-10 minutes.
  4. 4. Heat a cast iron skillet over medium-high heat and sear the steak cubes for 3-5 minutes until browned.
  5. 5. Warm corn tortillas in a separate skillet or microwave.
