  • 1/4 cup (30g) vanilla protein powder
  • 1 cup (240g) almond butter
  • 2 tbsp (42g) honey
  • 1/4 tsp peppermint extract
  • 1/4 cup (40g) mini dark chocolate chips
  • 1-2 tbsp (15-30ml) unsweetened almond milk (if needed)

Instructions

  1. In a large mixing bowl, combine rolled oats and vanilla protein powder. Stir well to ensure even distribution.
  2. Add almond butter, honey, and peppermint extract to the dry mixture. Mix thoroughly until all ingredients are well combined.
  3. If the mixture is too dry, gradually add 1 tablespoon of unsweetened almond milk at a time until you reach the desired consistency.
  4. Gently fold in the mini dark chocolate chips until evenly distributed throughout the mixture.
  5. Scoop out about 1 tablespoon of the mixture and roll it into a ball. Repeat this process until all mixture is used.
  6. Place the formed protein balls on a baking sheet lined with parchment paper. Refrigerate for at least 20 minutes to firm them up.
  7. Once chilled, store your Mint Chocolate Chip Protein Balls in an airtight container in the refrigerator for up to a week.
