  • 4 medium carrots (sliced)
  • 4 medium celery ribs (sliced)
  • 2 cloves minced garlic
  • 2 tablespoons olive oil
  • 2 tablespoons tomato paste
  • 4 tablespoons cornstarch (divided)
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon paprika
  • 1/4 teaspoon ground allspice
  • 1/4 cup cold water

Instructions

  1. Season the beef with cornstarch, salt, and pepper.
  2. In a large pot or Dutch oven, heat olive oil over medium-high heat and sear the beef until browned on all sides.
  3. Add minced garlic and tomato paste; cook briefly until fragrant.
  4. Pour in beef broth to deglaze the pot, then add potatoes, onions, carrots, celery, sugar, and spices.
  5. Bring to a boil; reduce heat to low and simmer for 90–120 minutes until beef is tender.
  6. Mix remaining cornstarch with cold water; stir into stew to thicken before serving.
