  • 1 tsp coarsely ground black pepper (divided)
  • 1 tsp sweet paprika
  • 1 tsp garlic powder
  • 1 tbsp olive oil
  • 1 tsp unsalted butter
  • 1 yellow onion (finely chopped)
  • 3 garlic cloves (minced)
  • 1 cup dry orzo pasta
  • 1 tsp dried thyme
  • 3 cups low sodium chicken broth
  • 5 ounces baby spinach
  • juice from ½ lemon
  • ½ cup grated Parmesan cheese

Instructions

  1. Season the salmon fillets with garlic powder, sweet paprika, salt, and pepper.
  2. Sear the salmon in olive oil and butter over medium-high heat for 3–4 minutes on each side, then set aside.
  3. In the same skillet, cook chopped onion and minced garlic until fragrant. Stir in thyme and toast the orzo for about a minute.
  4. Add chicken broth and bring to a boil; then simmer uncovered until mostly absorbed (about 8 minutes).
  5. Stir in spinach until wilted, followed by lemon juice and Parmesan cheese; adjust seasoning as needed.
  6. Return the salmon to the skillet to heat through for an additional 2–3 minutes before serving.
