  • 1 cup ricotta cheese
  • 1 tsp fresh thyme leaves (optional)
  • 6 sheets phyllo pastry
  • ¼ cup melted butter or olive oil
  • ¼ cup honey
  • ½ tsp red chili flakes

Instructions

  1. In a medium bowl, combine crumbled feta, ricotta, and thyme until smooth.
  2. Thaw and cut phyllo pastry sheets in half.
  3. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  4. Brush each strip of phyllo with melted butter or oil. Place about 1 tablespoon of cheese filling on one end, fold sides inward, and roll tightly.
  5. Arrange rolls seam-side down on the baking sheet, brush tops with more butter/oil, and bake for 15-20 minutes until golden brown.
