  • 8 oz package softened cream cheese
  • 1/2 cup softened butter or margarine
  • 2 cups sifted confectioner's sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, beat together eggs, sugar, vegetable oil, and pumpkin until light and fluffy.
  3. In another bowl, mix flour, baking powder, cinnamon, salt, and baking soda.
  4. Gradually add dry ingredients to the wet mixture until just combined.
  5. Pour batter into a greased 9×13-inch baking pan and bake for about 30 minutes or until a toothpick comes out clean.
  6. Allow bars to cool completely before frosting with a mixture of cream cheese, butter, confectioner's sugar, and vanilla extract.
