  • 2 cups + 2 Tbsp all purpose flour
  • 1/3 cup brown sugar
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, cubed and cold
  • 1 egg
  • 1/4 cup heavy whipping cream, plus more for brushing
  • 1/4 cup sour cream
  • 2 tsp vanilla extract
  • 1/2 cup fresh peaches, diced
  • 1/2 cup powdered sugar
  • 2 tsp vanilla extract
  • 1-3 Tbsp heavy whipping cream for glaze

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine flour, brown sugar, baking powder, and salt. Blend in cold cubed butter until crumbly.
  3. In another bowl, whisk together egg, heavy cream, sour cream, and vanilla extract. Pour into dry mixture and gently fold in diced peaches.
  4. Turn dough onto a floured surface; pat into a circle about 1 inch thick. Cut into wedges or use a biscuit cutter for rounds.
  5. Place on the prepared baking sheet and brush tops with heavy cream. Bake for 16 minutes until golden.
  6. While baking, whisk powdered sugar with vanilla extract and heavy cream to desired consistency for glaze.
  7. Cool slightly after baking before drizzling with glaze.
