  • 2 cups cottage cheese
  • 3 large eggs
  • 1 cup shredded mozzarella cheese
  • 1/2 cup mini turkey pepperoni slices
  • 1/4 cup grated parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • Pinch of salt
  • Pinch of pepper

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×9-inch baking dish.
  2. In a large bowl, whisk together cottage cheese and eggs until smooth.
  3. Stir in mozzarella cheese, most of the turkey pepperoni (set some aside for topping), parmesan cheese, Italian seasoning, garlic powder, salt, and pepper until well mixed.
  4. Pour mixture into the prepared baking dish and top with remaining turkey pepperoni slices.
  5. Bake for 30-35 minutes or until set and golden brown on top.
  6. Allow to cool slightly before slicing into squares and serve with marinara sauce.
