  • 225 g dark brown sugar
  • 280 g pumpkin purée
  • 75 g vegetable oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 200 g butter (for frosting)
  • 15 g dark brown sugar (for frosting)
  • 100 g full-fat cream cheese (for frosting)
  • 345 g powdered sugar (sifted)
  • 1/2 tsp vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 180°C (350°F) and line a muffin tin with cupcake liners.
  2. In a mixing bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin spice until evenly combined.
  3. In another bowl, mix dark brown sugar, pumpkin purée, vegetable oil, eggs, and vanilla extract until well blended.
  4. Gradually add the dry ingredients to the wet mixture and stir gently until just combined.
  5. Divide batter among cupcake liners and bake for about 23 minutes or until a toothpick inserted comes out clean.
  6. For the frosting, beat together butter and dark brown sugar until smooth; gradually add powdered sugar and vanilla extract until creamy.
  7. Once cooled completely, frost the cupcakes generously.
