  • ½ cup buttermilk
  • Zest of 1 lemon
  • ½ cup raspberry jam
  • ½ cup lemon curd
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2-3 tbsp cream or milk
  • Fresh raspberries for garnish

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream together softened butter and sugar until light and fluffy. Beat in eggs one at a time, then add vanilla extract and lemon zest.
  4. Gradually mix in the dry ingredients alternately with buttermilk until just combined.
  5. Fill cupcake liners two-thirds full with batter and bake for 18–20 minutes or until a toothpick comes out clean. Allow to cool completely.
  6. Core each cupcake and fill with raspberry jam and lemon curd mixture. Replace tops to seal.
  7. For the frosting, beat softened butter until smooth, then gradually add powdered sugar and cream until fluffy.
  8. Frost each cupcake generously and garnish with fresh raspberries.
