  • ¼ cup sour cream (½ cup total)
  • 4 large eggs (2 per layer)
  • 1 ½ tbsp cocoa powder
  • 1 ½ tsp vanilla extract (1 ½ tsp for vanilla layer)
  • 1 tbsp red food coloring
  • ½ cup heavy cream
  • ¾ cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 325°F (163°C). Grease a springform pan and line the bottom with parchment paper.
  2. For the crust: Mix Oreo crumbs with melted butter, press into the pan, and bake for 8-10 minutes to set.
  3. For the red velvet layer: Beat cream cheese and sugar until smooth, add sour cream, eggs, cocoa powder, vanilla extract, and red food coloring; mix until well combined. Pour over cooled crust.
  4. For the vanilla layer: Repeat mixing process with cream cheese, sugar, sour cream, eggs, and vanilla extract. Pour over the red velvet layer.
  5. Bake for about 50-60 minutes until edges are set but center is slightly jiggly.
  6. Cool gradually in the oven for an hour then refrigerate for at least six hours or overnight.
  7. For ganache: Heat heavy cream until hot but not boiling; pour over chocolate chips; stir until smooth.
  8. Top chilled cheesecake with ganache, whipped cream, Oreo crumbs, and whole Oreos before serving.
