  • 1 cup shredded Swiss cheese
  • 3/4 cup sauerkraut, drained and squeezed dry
  • 4 ounces cream cheese, softened
  • 1/2 cup rye breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • Oil for frying (vegetable or canola)
  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon pickle relish
  • 1 teaspoon hot sauce
  • 1/4 teaspoon garlic powder
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. In a bowl, mix the chopped corned beef, Swiss cheese, drained sauerkraut, and softened cream cheese until well combined.
  2. Chill the mixture for 20–30 minutes for easier handling.
  3. Form tablespoon-sized balls from the mixture.
  4. Set up a breading station with flour, beaten eggs, and a mix of rye and panko breadcrumbs.
  5. Roll each ball in flour, dip into egg, then coat thoroughly with the breadcrumb mixture.
  6. Heat oil to 350°F (175°C) in a frying pan and fry the balls in batches for 3–4 minutes until golden brown.
  7. Drain on paper towels and prepare the dipping sauce by mixing mayonnaise with ketchup, relish, hot sauce, and garlic powder.
