  • 5 cups cubed butternut squash
  • 1/2 bulb garlic
  • 1/3 cup olive oil
  • 1/4 tsp kosher salt
  • 4 leaves fresh sage (or 1 tsp dried herb)
  • 8 oz feta cheese
  • 32 oz vegetable broth
  • 2 tbsp honey

Instructions

  1. Preheat the oven to 400°F.
  2. In a Dutch oven, combine olive oil, cubed butternut squash, kosher salt, and sage. Toss to coat.
  3. Nestle the feta cheese and garlic bulb (cut side down) in the pot. Cover and roast for 45 minutes to an hour until tender.
  4. Remove from oven; squeeze roasted garlic into the pot. Add honey and vegetable broth.
  5. Blend until smooth using a blender or immersion blender.
  6. Taste and adjust seasoning if needed before serving warm.
