  • 1 ½ lbs green beans, trimmed
  • Olive oil
  • Kosher salt
  • Freshly cracked black pepper
  • 1 cup sour cream
  • ½ cup buttermilk
  • 4 large garlic cloves, grated
  • 2 tsp chopped fresh thyme
  • 1 tsp granulated garlic
  • 1 tsp onion powder
  • ½ lb shallots, peeled and thinly sliced
  • ¼ cup all-purpose flour

Instructions

  1. Preheat your oven to 425°F. On a half sheet pan, spread the trimmed green beans in an even layer. Drizzle with olive oil, season with salt and pepper, and roast for about 25 minutes until tender.
  2. In a mixing bowl, whisk together the sour cream, buttermilk, grated garlic, thyme, granulated garlic, onion powder, salt, and pepper to taste. Set aside.
  3. In a skillet over medium heat, add olive oil for frying shallots (about ¼ inch deep). Mix sliced shallots with flour in a bowl before frying until golden brown and crispy. Drain on paper towels.
  4. Serve roasted green beans drizzled with buttermilk dressing and topped with crispy shallots.
