Ingredients

Scale
  • 3 ½ cups all-purpose flour
  • 1 ½ teaspoons salt
  • ½ teaspoon instant yeast
  • 1 ¾ cups warm water (about 110°F)
  • 2 tablespoons fresh rosemary, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Optional: ½ teaspoon black pepper

Instructions

  1. In a mixing bowl, combine flour, salt, instant yeast, rosemary, garlic, and black pepper.
  2. Add warm water and olive oil; stir until a sticky dough forms.
  3. Cover the bowl with plastic wrap and let it rise at room temperature for 12-18 hours until doubled in size.
  4. Lightly flour a surface and gently turn out the dough. Shape it into a round loaf without overworking it.
  5. Place the shaped dough on floured parchment paper; cover and let rest for another 30-45 minutes while preheating the oven to 450°F (230°C).
  6. Heat a Dutch oven inside the oven for about 30 minutes.
  7. Transfer the dough (with parchment) into the hot Dutch oven, cover it, and bake for 30 minutes. Remove the lid and bake for an additional 10-15 minutes until golden brown.
  8. Let cool on a wire rack before slicing.
