  • 1 teaspoon ground cinnamon

  • 1 cup granulated sugar (for caramel)
  • 6 tablespoons unsalted butter (for caramel)
  • 1/2 cup heavy cream
  • 1 teaspoon sea salt

Instructions

  1. Preheat the oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. For the crust, mix graham cracker crumbs, granulated sugar, and melted butter in a bowl; press into the bottom of the pan. Bake for 10 minutes and cool slightly.
  3. In a large bowl, beat cream cheese until smooth; add sugar and mix well. Incorporate eggs one at a time, then add vanilla extract and sour cream until combined.
  4. Pour the filling over the cooled crust; smooth the top. Place in a larger roasting pan filled with hot water halfway up the sides of the springform pan. Bake for 55-65 minutes until slightly jiggly in the center.
  5. Cool in the oven with the door ajar for an hour; refrigerate for at least four hours or overnight.
  6. For the apple topping, sauté diced apples with butter, brown sugar, cinnamon, and nutmeg until soft (about 8 minutes).
