  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1/4 cup dry white apple vinegar or chicken broth
  • 2 tablespoons fresh lemon juice (about 1/2 a lemon)
  • 2 tablespoons capers, rinsed and drained
  • 1 teaspoon lemon zest
  • Salt and black pepper to taste
  • Optional: 1 tablespoon fresh parsley, chopped

Instructions

  1. In a medium skillet, heat the butter and olive oil over medium heat until the butter melts and begins to bubble.
  2. Add minced garlic and sauté for 1–2 minutes until fragrant but not browned.
  3. Pour in the dry white apple vinegar or chicken broth. Stir and simmer for 2–3 minutes to reduce slightly.
  4. Mix in the lemon juice, capers, and lemon zest. Season with salt and black pepper to taste. Cook for an additional 1–2 minutes.
  5. Remove from heat and stir in chopped parsley if desired.
  6. Drizzle warm sauce over your choice of grilled chicken, pasta, or roasted vegetables.
