  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tsp curry powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp turmeric

  • Salt and pepper to taste
  • Broth or water to cover the meat
  • 1 can (13.5 oz) coconut milk

Instructions

  1. Season beef with salt and pepper. In a heavy-bottomed pot over medium-high heat, add vegetable oil and sear the beef until browned on all sides. Remove and set aside.
  2. In the same pot, sauté chopped onion until translucent (about 5 minutes). Add minced garlic and grated ginger; cook until fragrant (about 1 minute).
  3. Stir in curry powder, cumin, coriander, turmeric, and optional chili flakes; toast spices for about 2 minutes.
  4. Return seared beef to the pot; stir to combine and add enough broth or water to cover the meat. Bring to a gentle simmer.
  5. Reduce heat to low, cover the pot, and let it simmer for about 2-3 hours until beef is tender. Stir occasionally.
  6. Once tender, stir in coconut milk and simmer uncovered for an additional 15 minutes.
