  • 1 tbsp olive oil
  • smoked paprika
  • garlic powder
  • cayenne pepper
  • salt and pepper
  • ¼ cup mayonnaise
  • adobo sauce
  • ½ tsp lime juice
  • 2 brioche buns, toasted
  • cooked turkey bacon strips (optional)
  • pickled jalapeños (optional)

Instructions

  1. Pound chicken breasts to an even thickness. Rub with olive oil and season with spices.
  2. Preheat grill to medium-high heat. Cook chicken for 4–5 minutes per side until internal temperature reaches 165°F (74°C). Melt cheese on top during the last minute.
  3. In a bowl, mix together mayonnaise, adobo sauce, and lime juice until smooth.
  4. Toast brioche buns until golden brown.
  5. Assemble by spreading chipotle mayo on both sides of the buns. Layer with avocado slices, grilled chicken with melted cheese, crispy turkey bacon (if using), and pickled jalapeños.
