  • 2 tablespoons vegetable oil
  • 1.5 lbs beef chuck, cut into 1-inch cubes
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tablespoons Madras curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • 1 tablespoon tomato paste
  • 14 oz can diced tomatoes
  • 1/2 cup beef stock
  • Salt and freshly ground black pepper to taste
  • 1 tablespoon lemon juice

Instructions

  1. Heat vegetable oil in a heavy-bottomed pot over medium heat. Sauté the chopped onion until translucent, then add minced garlic and grated ginger, cooking until fragrant.
  2. Increase heat slightly and brown the beef cubes on all sides for about 5-7 minutes.
  3. Add Madras curry powder, ground cumin, ground coriander, turmeric, and cayenne pepper; stir well to coat the beef.
  4. Mix in tomato paste and diced tomatoes, pour in beef stock, and season with salt and black pepper.
  5. Bring to a boil, reduce heat to low, cover, and simmer for about 1 hour until beef is tender.
  6. Stir in lemon juice before serving.
