4 medium tortillas (flour, whole wheat, or gluten-free)
2 cups fresh spinach (chopped)
1 cup feta cheese (crumbled)
1/4 cup sun-dried tomatoes (chopped)
1/4 cup black olives (sliced)
1/2 cup cooked grilled chicken (diced)
2 tablespoons olive oil or butter (for cooking)
Instructions
Wash and chop the spinach, sun-dried tomatoes, and black olives. Dice the cooked grilled chicken.
Heat olive oil in a non-stick skillet over medium heat.
Spread half of one tortilla with crumbled feta cheese. Layer with chopped spinach, sun-dried tomatoes, sliced olives, and diced chicken. Fold the tortilla in half.
