  • 4 medium tortillas (flour, whole wheat, or gluten-free)
  • 2 cups fresh spinach (chopped)
  • 1 cup feta cheese (crumbled)
  • 1/4 cup sun-dried tomatoes (chopped)
  • 1/4 cup black olives (sliced)
  • 1/2 cup cooked grilled chicken (diced)
  • 2 tablespoons olive oil or butter (for cooking)

Instructions

  1. Wash and chop the spinach, sun-dried tomatoes, and black olives. Dice the cooked grilled chicken.
  2. Heat olive oil in a non-stick skillet over medium heat.
  3. Spread half of one tortilla with crumbled feta cheese. Layer with chopped spinach, sun-dried tomatoes, sliced olives, and diced chicken. Fold the tortilla in half.
  4. Cook the folded quesadilla in the skillet for about 3-4 minutes until golden brown; flip it over using a spatula and cook for another 3-4 minutes until crispy.
  5. Remove from the skillet and slice into wedges before serving.
