  • 8 tbsp butter
  • ⅓ cup granulated sugar
  • ⅓ cup brown sugar
  • 1 cup mashed bananas (approximately 2 bananas)
  • ⅓ cup maple syrup
  • 2 tsp vanilla extract
  • 3 eggs
  • ¾ cup buttermilk

Instructions

  1. Preheat the oven to 350°F (175°C). Prepare a deep baking dish (9x9x3” or 9x11x3”) with nonstick spray.
  2. In a mixing bowl, cream together the granulated sugar, brown sugar, and butter until fluffy. Add eggs, vanilla extract, buttermilk, maple syrup, and mashed bananas; mix well.
  3. In another bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  4. Gradually combine dry ingredients with the wet mixture until just combined.
  5. Pour batter into the prepared dish and bake for 45-55 minutes or until a toothpick comes out clean.
  6. While baking, prepare the toffee sauce by melting butter and brown sugar in a pot; stir in heavy cream and vanilla until smooth.
  7. After cooling slightly, poke holes in the cake and pour over the cooled toffee sauce; let it soak for at least an hour before serving.
