  • 1 cup vegetable oil
  • 1 cup mashed fresh strawberries (or strawberry puree)
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 box white cake mix (15.25 oz)
  • 1 box strawberry-flavored vegan gelatin (3 oz)
  • 8 oz cream cheese, softened
  • 1 cup unsalted butter, softened
  • 2-3 cups powdered sugar, sifted
  • 2 teaspoons vanilla extract
  • 1 cup heavy whipping cream (cold)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease three round cake pans.
  2. In a large bowl, combine the cake mix and gelatin powder. Add eggs, milk, oil, sour cream, strawberries, and vanilla; mix until smooth.
  3. Divide the batter among prepared pans and bake for 22-28 minutes until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to wire racks.
