  • 3 tbsp (38 g) granulated white sugar
  • 1/2 tsp vanilla
  • 12 oz (340 g) fresh strawberries, hulled and finely diced
  • 1/4 cup (50 g) granulated white sugar
  • 2 3/4 cups (344 g) all purpose flour, spooned and leveled
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup (200 g) granulated white sugar
  • 1 cup (227 g) unsalted butter, very softened
  • 1 egg, at room temperature
  • 2 tsp vanilla
  • 1/4 cup (50 g) granulated white sugar, for rolling dough in

Instructions

  1. Prepare the cheesecake filling by mixing cold cream cheese with granulated sugar and vanilla until smooth.
  2. In another bowl, combine finely diced strawberries with sugar and set aside to release juices.
  3. Make the cookie dough by creaming softened butter and sugar, then adding egg and vanilla. Mix dry ingredients separately and combine with wet ingredients before folding in strawberries.
  4. Preheat the oven to 350°F (175°C). Scoop dough, flatten slightly, add cheesecake filling, and shape into balls rolled in sugar.
  5. Bake for about 11 minutes until edges are lightly golden; let cool before serving.
