  • 1 cup white flour
  • 1 cup whole wheat flour
  • 1/2 cup cane sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups frozen sliced strawberries
  • 1/2 cup + 2 tablespoons butter or oil (coconut or mild oil)
  • 2 eggs
  • 1/2 cup yogurt
  • 2 tablespoons water
  • 2 teaspoons vanilla

Instructions

  1. Preheat your oven to 425°F (218°C) and prepare a muffin pan with liners or grease it.
  2. In a large bowl, whisk together white flour, whole wheat flour, cane sugar, baking powder, baking soda, and salt.
  3. Gently fold in the frozen strawberries until evenly coated.
  4. In another bowl, mix melted butter (or oil), eggs, yogurt, water, and vanilla until smooth.
  5. Combine the wet mixture with the dry ingredients using a spatula; fold gently until just combined.
  6. Distribute about ⅓ cup of batter into each muffin cup and bake at 425°F for 8 minutes. Lower the temperature to 375°F (190°C) and bake for an additional 8–10 minutes until golden brown.
