  • 10 mini pumpkins
  • 1 lb ground beef
  • 1 can (15 oz) pumpkin puree
  • 1 large yellow onion
  • 2 garlic cloves
  • 6 tbsp olive oil
  • 2 tsp salt
  • 1/2 tsp ground black pepper
  • 1 tsp pumpkin pie spice
  • 1/2 tbsp fresh thyme
  • 1/2 tbsp fresh oregano
  • 1/2 tbsp fresh sage, chopped

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Rinse and dry mini pumpkins; cut off tops and scoop out seeds.
  3. In a sauté pan, heat olive oil over medium heat. Sauté diced onion and minced garlic until fragrant (3-5 minutes).
  4. In a mixing bowl, combine ground beef, pumpkin puree, sautéed onion and garlic, pumpkin pie spice, salt, pepper, thyme, oregano, and sage.
  5. Grease a casserole dish with olive oil. Place pumpkins in the dish; fill each with the beef mixture and replace tops.
  6. Roast in the oven for 30-35 minutes until pumpkins are tender.
