  • 1 large onion
  • 4-5 carrots
  • 3 cups golden potatoes
  • 4 cloves garlic
  • 2 quarts beef stock
  • 1 cup flour (for dumplings)
  • 2 tablespoons flour
  • 1 teaspoon fresh rosemary
  • 2 teaspoons sea salt
  • 1 teaspoon black pepper
  • 2 teaspoons tomato paste
  • 2 sprigs fresh thyme
  • 2 teaspoons baking powder
  • 1/2 teaspoon sea salt (for dumplings)
  • 1 tablespoon butter (room temperature)
  • 1/3 to 1/2 cup milk
  • Fresh herbs (parsley and chives, optional)

Instructions

  1. Chop the onion, carrots, and potatoes; mince the garlic.
  2. In a large pot, heat oil over medium heat. Coat the beef in flour and brown it for about 5–7 minutes.
  3. Add chopped vegetables, garlic, rosemary, salt, and pepper; stir for another 5 minutes.
  4. Mix in tomato paste and pour in the beef stock along with thyme sprigs. Bring to a boil then reduce heat and simmer for about 90 minutes.
  5. For dumplings, mix flour, baking powder, and salt in a bowl; cut in butter until crumbly. Gradually add milk until just combined.
  6. Drop spoonfuls of dumpling dough onto the stew surface; cover tightly and cook for an additional 20 minutes.
