  • 2 tsp instant coffee granules
  • 1/4 cup cocoa powder (plus extra for dusting)
  • 1/2 cup mascarpone cheese
  • 1 tsp vanilla extract
  • 1/4 cup brewed coffee (for syrup)
  • 2 tbsp sugar (for syrup)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Whisk together flour, instant coffee granules, cocoa powder, and a pinch of salt in one bowl; set aside.
  3. In another bowl, cream together butter and sugar until fluffy. Add egg and vanilla extract; mix well.
  4. Gradually combine dry ingredients into the wet mixture until just combined.
  5. Scoop dough onto prepared baking sheets, spacing about two inches apart.
  6. Bake for 10-12 minutes until edges are golden but centers remain soft; cool on racks.
  7. For the syrup, heat brewed coffee with sugar until dissolved; allow to cool slightly.
  8. Spread mascarpone on one half of each cookie, drizzle with syrup, and top with another cookie.
