  • ¼ tsp dried thyme
  • ½-1 tsp red chili flakes (optional)
  • 16 oz gnocchi
  • 2 cups heavy cream or half-and-half
  • 2 cups shredded cheddar cheese (medium or sharp)

Instructions

  1. Cook the turkey bacon in a large pot over medium heat until crispy. Once done, remove it from the pot, chop it into small pieces, and set aside.
  2. In the same pot, add either butter or olive oil. Heat it up before adding diced onions and sliced carrots. Sauté until they are tender, usually about 5-7 minutes.
  3. Pour in the chicken broth. Bring the mixture to a gentle simmer, allowing flavors to meld together.
  4. Add heavy cream along with salt, pepper, garlic powder (or minced garlic), dried thyme, and red chili flakes if using. Stir continuously as you add shredded cheddar cheese until melted.
  5. Introduce gnocchi into the pot. Cook according to package instructions—usually around 2 minutes—until they are soft and floating.
  6. Stir in the chopped turkey bacon. Taste your soup one last time to adjust seasonings as needed. Serve hot and enjoy!
